I work hard at health, fitness & nutrition. I work out primarily at home and share with you what I do, how I do it, what motivates me & what inspires me. I get into the nitty gritty of my trials & tribulations, barriers & obstacles. And when I realize a success, hard-won or otherwise, you'll be the first to know about it!

You should try them with raisins soaked in orange juice (and add some cinnamon to the batter)

OMG!!!! I LOVE pancakes but can not eat them anymore bc I found out about six months ago that I have an auto-immune disease called Hashimoto's that affects the thyroid. People with this disease often have gluten intolerance (which I do) and should never eat corn (which most people, and doctors don't know). So needless to say I am super stoked to try this! Thank you thank you thank you. I came online to find a good oatmeal recipe for dinner tonight and stumbled on your site.

Amazing.

I have been making protein pancakes for the past 2 years and love them !
Try adding a few more ingredients and they will be even more delicious:
1C oatmeal
5-6 egg whites ( I do usually just use whites when I make these)may need to add to this depending how thin you like them
1/2C no salt added cottage cheese
1 - 2 tsp baking powder (makes them fluffier)
2 scoops vanilla whey protein powder
cinnamon
ground flax seed
wheat germ
pure vanilla extract

sometimes i put this all in the blender or just stir in a bowl but they outcome are a little thicker pancake if just stirred.

This makes about 16-20 pancakes (use a 1/4C measuring cup to scoop it) Package them up and freeze them for later.

Can top these with some plain greek yogurt and berries

for a postwork out snack take 2 pancakes , spread some almond butter and sliced bananas...yummmm

let me know what you think

Oh really? Spenda and spray on butter is bad? crud. Yes, I just stirred it good. You still saw like some cottage cheese bits in there, but it was totally battery and looked like a pancake when cooked. :)

Karen, you and I are going to have to have a little talk about the evils of Splenda and SPRAY ON BUTTER!??!?!? OMG!! I'm pleading with you to read your ingredients lists on those two items!! :-) Seriously evil stuff. I swear by just using some AllFruit (raspberry) spread (aka: jam)... its delicious.

also, you just stirred it up? so the oats stayed the same shape? I didn't realize it would work without whipping the oatmeal up into little tiny bits thereby making a batter similar to the other type of pancake batter. Will have to try that sometime.

Glad you like the recipe. It really does rock!!

I tried your recipe this morning. I used a little less than 1/2 cup of oats..same with the cottage cheese, 1 egg, splenda packet, and almond extract. For a topping I just sprayed some Smart Balance 0 calorie Butter Spray on it. Turned out good! I haven't had pancakes in years because of the calories and normally non-healthy aspect of it, so this is great. I will definately put this in the breakfast rotation. Next time maybe with chopped strawberries and vanilla extract.

Oh, and I just mixed the batter up with a spoon. Turned out good and saved me from having to wash my blender. :)

p.s. I was quite satiated for over 3 hrs after eating my 2 pancakes.
