Hey gang!

Well, as you saw by my last post, I’m under MAJOR construction HELL.

This means not only can I not record decent videos cuz of the noise, but I can barely even form coherent thoughts, I’m so frazzled by the decibel level and CONSTANT nature of it all.

But, while I’m under my own personal duress, my friend Stef over at Cougar Fitness volunteered to help me out with a guest post in the form of one of her favourite fat burning / muscle building and YUMMY-sounding chicken recipes.

Getting bored with the same old, same old when it comes to your chicken meals? Shake things up and try this one out next time chicken is on the menu!!

~~~~~~~~~~~~Make Your Chicken More Exciting

Tomato Feta Chicken

Ingredients:

– 4 Medium Sized Chicken Breasts
– 1/4 teaspoon Sea Salt
– 1/4 teaspoon Pepper
– Handful Sundried Fire-Roasted Tomatoes
– 1/2 Cup Fat Free Feta Cheese
– 2 Tablespoons Minced Garlic

Preparation Directions:

~ Preheat oven to 350 degrees.

~ Slice chicken breasts length-wise to form a “groove”.

~ Place chicken in non-stick skillet on stove top and cook until golden on each side.

~ In the meantime, mix minced garlic, salt and pepper, feta, and sundried tomates together.

~ Remove chicken from pan and scoop garlic/feta/tomato mixture into each groove and across top of chicken breast.

~ Bake for 10-15 minutes, or until meat is no longer pink.

Makes 4 Servings

Nutrients per Serving:

Calories: 170
Protein: 29 g
Carbs: 2 g
Fat: 2.5 g

* Note – to add even more flavor, you can start with marinated chicken breasts!
